Beef & Broccoli
-2 Large bowls
-Large nonstick skillet
-Cutting board
-Sharp knife
-1 lb sirloin or flank steak (I used sirloin because flank steak
was a tad pricey this time around)
-4 cups broccoli florets
-1 small onion (I didn’t use onions this time but feel
free!)
-¼ cup lite soy sauce
-1 tsp ground ginger
-½ cup & 2 tsp water
-½ garlic powder
-3 tbsp cornstarch
-1 tbsp peanut oil
-1 tbsp brown sugar
-2 cups cooked brown rice (I chose not to use rice this time
around because I’m doing the 21 Day Fix program and I opted to have wine
instead of my last allotted carb for the day).
Preparation:
In the large bowl, mix together the 2 tbsp cornstarch and 2
tbsp water and garlic powder. Then mix together until smooth Cut the steak and
add to the mixture. Put the coated steak
into a nonstick skillet with 1 tbsp of peanut oil over medium high heat, cook
beef until browned but not overdone.
Remove beef and place into a clean large bowl and keep warm.
Cut broccoli and onions (if you chose to use them) and add to the nonstick
skillet for about 4 to 5 minutes. I added a tad bit more peanut oil. After the veggies are done cooking, add the
beef back to the skillet.
In another large bowl mix the ¼ cup lite soy sauce, 1 tbsp
brown sugar, ½ tsp ground ginger and remaining water and cornstarch, mix altogether
until smooth. Add mixture to the skillet the broccoli, onions and beef. Cook
for 2 more minutes and add over brown rice. Serve immediately.
