
Shrimp Pasta
1/2 - 1 cup whole wheat pasta
3/4 lb uncooked shrimp with shell on
1/2 - 1 cup raw, fresh spinach
1/2 cup broccoli
A few leaves of fresh basil
3 tsp olive oil
A pinch of ground black pepper
1 tsp minced garlic cloves
A few crumbles of feta cheese
Preparation
Boil water for pasta, cook and drain. Heat pan and add 1 tsp of olive oil and add shrimp. Cook shrimp and take out. Add garlic, spinach and broccoli to pan. Add 1 tsp olive oil.
Put pasta into a bowl and add shrimp, broccoli, shrimp and 1 more tsp of olive oil. Toss everything together and add a few crumbles of feta cheese and a pinch of ground black pepper. Place fresh basil leaves on top for garnish.
